Potato Leek Soup

Ingredients

  • 6 c sliced potatoes
  • 2 c sliced leeks
  • 6 c water
  • 6 bouillon cubes
  • 1 c milk
  • 2 T butter or margarine
  • 2 tsp salt
  • dash pepper

Instructions

  1. Cook potatoes, leeks, bouillon cubes, and water for 45 minutes or until tender. Cool slightly.
  2. Puree in blender. Reheat. Add milk, butter, salt, and pepper.
  3. Serve hot with slice of crisp toast or crackers.
