Buttermilk-Cheese Biscuits

Yield: 8 biscuits

Ingredients

  • 1 2/3 c flour
  • 2 tsp baking flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/4 c shortening
  • 1 c shredded cheddar cheese
  • 3/4 c buttermilk

Instructions

  1. Combine first four ingredients.
  2. Cut in shortening until mixture resembles coarse crumbs.
  3. Stir in cheese - add buttermilk. Stir only until dough clings together.
  4. On a lightly floured surface, knead lightly until easy to handle.
  5. Roll into 12" circle.
  6. Cut into 8 wedges.
  7. Begin at the wide end of wedge and roll to a point. Place biscuits point side down on greased pan.
  8. 450 degrees for 12-14 minutes or until golden brown.
