Potato Leek Soup
Ingredients
- 6 c sliced potatoes
- 2 c sliced leeks
- 6 c water
- 6 bouillon cubes
- 1 c milk
- 2 T butter or margarine
- 2 tsp salt
- dash pepper
Instructions
- Cook potatoes, leeks, bouillon cubes, and water for 45 minutes or until tender. Cool slightly.
- Puree in blender. Reheat. Add milk, butter, salt, and pepper.
- Serve hot with slice of crisp toast or crackers.
