Mushroom Crab Melts

Ingredients

  • 3 bacon strips diced
  • 1 cup sliced fresh mushrooms
  • 1/4 cup chopped onion
  • 1 can (6 ounces) crab meat, drained, flaked or 1 cup chopped imitation crab meat
  • 1 cup (4 oz) shredded Swiss cheese
  • 1/2 cup mayonnaise
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons butter or margarine
  • 6 English muffins split
  • Dash cayenne pepper and paprika

Instructions

  1. In a skillet, cook bacon until crisp - remove to paper towels
  2. Drain, reserving about 2 tablespoons drippings in pan
  3. Saute mushrooms and onion in drippings until tender
  4. In a large bowl combine crab, Swiss cheese, mayonnaise, mushroom mixture, Parmesan cheese and bacon
  5. Spread butter over muffin halves
  6. Top with crab mixture
  7. Sprinkle with cayenne pepper and paprika
  8. Bake on ungreased baking sheet
  9. Bake at 400 degrees for 10-15 minutes or until lightly browned.
