Low-fat Fish Chowder

Could use some clam juice as some of liquid. I added some thyme and a little white wine also. could also add some diced ham or chopped bacon.

Ingredients

  • 1 # red potatoes peeled and cubed
  • 2 1/2 cups chicken broth
  • 3 celery ribs, chopped
  • 8 green onions, chopped
  • 1/2 cup chopped sweet ted pepper
  • 1 1/2 cup fat-free milk
  • 1/4 cup flour
  • 1/2/ cup evaporated milk
  • 3/4 # small shrimp
  • 3/4 # cod or haddock cut into 1" cubes
  • 2 T minced fresh parsley or dried
  • 1/2 tsp Worcestershire sauce
  • 1/8 tsp cayenne pepper
  • 1/8 tsp pepper
  • salt to taste

Instructions

  1. In large kettle, bring potatoes, broth, celery, onions and red pepper to a boil.
  2. Reduce heat, cover and simmer for 13 minutes or until vegetables are tender.
  3. Stir in milk.
  4. Combine flour and evaporated milk until smooth.
  5. Gradually stir into potato mixture.
  6. Bring to a boil and cook and stir for 2 minutes or until thickened.
  7. Stir in the remaining ingredients except shrimp.
  8. Return to boil. Cook and stir for 2-3 minutes.
  9. Add shrimp and cook another 2-3 minutes.
