Low-fat Fish Chowder
Could use some clam juice as some of liquid. I added some thyme and a little white wine also. could also add some diced ham or chopped bacon.
Ingredients
- 1 # red potatoes peeled and cubed
- 2 1/2 cups chicken broth
- 3 celery ribs, chopped
- 8 green onions, chopped
- 1/2 cup chopped sweet ted pepper
- 1 1/2 cup fat-free milk
- 1/4 cup flour
- 1/2/ cup evaporated milk
- 3/4 # small shrimp
- 3/4 # cod or haddock cut into 1" cubes
- 2 T minced fresh parsley or dried
- 1/2 tsp Worcestershire sauce
- 1/8 tsp cayenne pepper
- 1/8 tsp pepper
- salt to taste
Instructions
- In large kettle, bring potatoes, broth, celery, onions and red pepper to a boil.
- Reduce heat, cover and simmer for 13 minutes or until vegetables are tender.
- Stir in milk.
- Combine flour and evaporated milk until smooth.
- Gradually stir into potato mixture.
- Bring to a boil and cook and stir for 2 minutes or until thickened.
- Stir in the remaining ingredients except shrimp.
- Return to boil. Cook and stir for 2-3 minutes.
- Add shrimp and cook another 2-3 minutes.
