Dijon Chicken Salad
Ingredients
- 4 chicken breasts, boned and skinned
- Lettuce leaves etc. for greens
- For the Marinade
- 2 tablespoons Dijon mustard
- 3 garlic cloves crushed
- 1 tablespoon grated onion
- 4 tablespoons white wine
- For Mustard Dressing
- 2 tablespoons tarragon vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 6 tablespoons olive oil
- salt and black pepper
Instructions
- Mix all marinade ingredients in shallow glass dish large enough to hold chicken in single layer
- Turn chicken over in the marinade and coat completely
- Cover with wrap and refrigerate overnight
- Preheat oven to 375 degrees
- Transfer chicken and marinade to overnproof dish
- Cover with foil and bake about 35 minutes or until tender
- Set aside to cool
- Put all mustard dressing ingredients into screw-top jar and shake vigorously
- (This can be made days in advance and stored in refrigerator)
- Slice chicken thinly, fan out slices and arrange on serving dish with salad leaves
- Spoon on some mustard dressing and serve
