Dijon Chicken Salad

Ingredients

  • 4 chicken breasts, boned and skinned
  • Lettuce leaves etc. for greens
  • For the Marinade
  • 2 tablespoons Dijon mustard
  • 3 garlic cloves crushed
  • 1 tablespoon grated onion
  • 4 tablespoons white wine
  • For Mustard Dressing
  • 2 tablespoons tarragon vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 6 tablespoons olive oil
  • salt and black pepper

Instructions

  1. Mix all marinade ingredients in shallow glass dish large enough to hold chicken in single layer
  2. Turn chicken over in the marinade and coat completely
  3. Cover with wrap and refrigerate overnight
  4. Preheat oven to 375 degrees
  5. Transfer chicken and marinade to overnproof dish
  6. Cover with foil and bake about 35 minutes or until tender
  7. Set aside to cool
  8. Put all mustard dressing ingredients into screw-top jar and shake vigorously
  9. (This can be made days in advance and stored in refrigerator)
  10. Slice chicken thinly, fan out slices and arrange on serving dish with salad leaves
  11. Spoon on some mustard dressing and serve
