Oven-Baked Chicken Nuggets

Nuggets can be made in advance and frozen.

Ingredients

  • 2 garlic cloves (optional)
  • 1/4 c parsley sprigs (optional)
  • 4 slices stale bread
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 c Parmesan cheese
  • 2 T melted margarine
  • 1 pound skinless, boneless chicken breast
  • 2 T milk

Instructions

  1. Preheat oven to 425 degrees. Line a baking sheet with foil and grease it lightly.
  2. Make the breading: Peel the garlic cloves and placed them in a food processor with the parsley. Process until finely chopped.
  3. Tear the bread into small pieces and add to the processor. Add the salt, pepper, and Parmesan. Process on and off until the bread is coarsely crumbed. Pour into a paper or plastic bag.
  4. Drizzle melted butter over the breadcrumbs.
  5. Cut the chicken into 1-inch cubes. Place the milk in a small bowl. Add the chicken and stir to moisten well.
  6. Drain the chicken cubes, then place them in the bag of breading and shake until well coated.
  7. Place the nuggets on the prepared baking sheet, leaving space between them, and bake them for 15-20 minutes, or until crisp. Turning halfway through the cooking time will improve the allover crispness.
