Cheesecake Tarts

Yield: 24 tarts

Ingredients

  • 16 oz. cream cheese, softened
  • 2 eggs
  • 3/4 c sugar
  • 1 tsp vanilla
  • 1 box 'Nilla Wafers
  • 21 oz. pie filling
  • 24 cupcake wrappers

Instructions

  1. Beat cream cheese till smooth.
  2. Add eggs, sugar and vanilla and beat.
  3. Put papers in muffin tins and a 'Nilla Wafer, rounded side up, in each paper.
  4. Fill cups 2/3 full of cheese mixture on top of 'Nilla wafer.
  5. Bake at 350 for about 20 minutes or until set. Cool completely.
  6. Top each tart with about 1 T of favorite pie filling.
  7. You may leave tarts in papers, or remove from papers when cool.
