Cheddar Cheese Bread

Ingredients

  • Makes 1 loaf (16 slices)
  • 1 package active dry yeast
  • 1 1/4 cups warm water
  • 2 2/3 cups all-purpose flour
  • 1 cup shredded sharp cheddar cheese (4 oz)
  • 2 tablespoons sugar
  • 2 tablespoons shortening
  • 1 teaspoon salt
  • 1 teaspoon melted butter or margarine

Instructions

  1. in large mixing bowl dissolve yeast in warm water
  2. Add 1 2/3 cups of flour, cheese, sugar, shortening and salt
  3. Beat with electric mixer on low for 30 seconds scraping bowl as needed
  4. Beat on medium speed for 2 minutes continuing to scrape sides
  5. Add remaining 1 cup of flour stirring until combined
  6. Cover and let rise in warm place for 30 minutes
  7. Then stir about 25 strokes
  8. Spread batter evenly in a greased 1 1/2 quart glass casserole. (Loaf will eventually bake in this casserole.)
  9. Cover and let rise in warm place 45 minutes or until batter has doubled in size
  10. Preheat oven to 375 degrees
  11. Bake at 375 for 40-45 minutes or until golden brown
  12. Cover with foil the last 25 minutes to prevent top from overbrowning
  13. Remove the bread from the oven and brush top with melted butter or margarine
  14. Remove bread from casserole dish and cool on wire rack
