Baked Crab and Artichoke Dip

Ingredients

  • 8 oz. marinated artichokes, drained and minced
  • 4 oz. roasted green chiles, skinned, seeded, and diced
  • 1/2 c. roasted red pepper, skinned, seeded, and diced
  • 8 oz. imitation meat
  • 8 oz. cream cheese, softened
  • 1/2 c.salsa
  • 2 c. cheddar or jack cheese, shredded
  • freshly ground black pepper

Instructions

  1. Preheat oven to 400°F. In a large bowl, combine the artichokes, green chiles, red peppers, crab, cream cheese, salsa, cheddar or jack cheese, and black pepper. Mix thoroughly and pour into a baking dish. If you fill the pan to the brim, it will likely bubble over and make some amount of mess in the oven.
  2. Bake for 35 -40 minutes until the top is golden and bubbling.
