Sweet Potato Dippers

Sweey Potato Dippers

Ingredients

  • 1 1/4 lbs. sweet potatoes (about 2 medium) peeled
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • DIP
  • 3 oz fat-free cream cheese
  • 3 tablespoons reduced-fat sour cream
  • 2 teaspoons finely chopped green onion
  • 2 teaspoons finely chopped seeded jalapeno peppers

Instructions

  1. Cut potatoes into 1/8" slices
  2. Place in large bowl
  3. Drizzle with oil
  4. Sprinkle with salt and pepper - toss to coat
  5. Arrange in a single layer in two ungreased 10x15" baking pans
  6. Bake at 375 for 25-30 minutes or until golden brown - turning once
  7. In a small bowl, beat dip ingredients
  8. Serve with potatoes
  9. Garnish with additional green onion
