Stir Fried Ginger Chicken
Ingredients
- 2 tablespoons sunflower oil
- 1 onion sliced
- 6 oz carrots cut into thin sticks
- 1 clove garlic finely chopped
- 12 oz boneless skinless chicken breasts
- 2 tablespoons fresh ginger root peeled and grated
- 1 teaspoon ground ginger
- 4 tablespoons sweet sherry
- 1 tablespoon tomato paste
- 1 tablespoon sugar
- 1/3 cup orange juice
- 1 teaspoon cornstarch
- 1 orange peeled and segmented
- fresh snipped chives to garnish
Instructions
- Heat oil in wok
- Add onion, carrots, and garlic and stir fry for 3 minutes or until softened
- Using sharp knife slice chicken into thin strips
- Add chicken to wok plus ginger root and ground ginger
- Stir fry for another 10 minutes or until chicken is well cooked
- Mix together sherry, tomato paste, sugar, orange juice, and cornstarch in bowl
- Stir mixture into wok and heat through until mixture bubbles and thickens
- Add orange segments and carefully toss into mixture
- Transfer to serving bowl and garnish with cut chives
