Stir Fried Ginger Chicken

Ingredients

  • 2 tablespoons sunflower oil
  • 1 onion sliced
  • 6 oz carrots cut into thin sticks
  • 1 clove garlic finely chopped
  • 12 oz boneless skinless chicken breasts
  • 2 tablespoons fresh ginger root peeled and grated
  • 1 teaspoon ground ginger
  • 4 tablespoons sweet sherry
  • 1 tablespoon tomato paste
  • 1 tablespoon sugar
  • 1/3 cup orange juice
  • 1 teaspoon cornstarch
  • 1 orange peeled and segmented
  • fresh snipped chives to garnish

Instructions

  1. Heat oil in wok
  2. Add onion, carrots, and garlic and stir fry for 3 minutes or until softened
  3. Using sharp knife slice chicken into thin strips
  4. Add chicken to wok plus ginger root and ground ginger
  5. Stir fry for another 10 minutes or until chicken is well cooked
  6. Mix together sherry, tomato paste, sugar, orange juice, and cornstarch in bowl
  7. Stir mixture into wok and heat through until mixture bubbles and thickens
  8. Add orange segments and carefully toss into mixture
  9. Transfer to serving bowl and garnish with cut chives
