Stir-fried Beef with Cashews

Ingredients

  • 1 1/4 pounds flank steak sliced thin
  • 2 tablespoons soy sauce
  • 1/3 cup hoisin sauce
  • 1/3 cup water
  • 1/2 teaspoon red pepper flakes or more to taste
  • 2 tablespoons peanut or vegetable oil
  • 8 ounces snow peas
  • 4 cloves garlic
  • 1 tablespoon minced fresh ginger
  • 1/2 cup roasted unsalted cashews chopped

Instructions

  1. Combine steak and soy sauce - cover - refrigerate while preparing other ingredients
  2. Whisk hoisin sauce, water and pepper flakes together in small bowl
  3. Heat oil in wok or pan over high heat until smoking
  4. Add half of steak and cook for 1 minute
  5. Transfer to bowl and repeat with remaining beef
  6. Add remaining teaspoons of oil to empty wok.
  7. Add snow peas and cook
  8. Add garlic and ginger and cook for about 45 seconds
  9. Add all ingredients back into wok
  10. Whisk in hoisin sauce mixture and cook until thickened - about 1 minute
  11. Stir in cashews and transfer to platter
