Smoked Cajun Sausage Po Boy
A 2018 favorite at the "Kremer Smoke-Off" 🙂
Ingredients
- Sauce
- 1 cup Dijon mustard
- 1 cup light mayonnaise
- 2 tsp Worcestershire sauce
- Tabasco to taste (I slowly added until you could just barely get a bite)
- Sandwich
- andouille sausages cut into rounds or sliced in half horizontally and vertically
- hickory wood
- red cabbage
- red onion
- tomato
- dill pickle slices
- peppercinis or pickled banana pepper rounds
- hoagie or small sub buns
Instructions
- Smoke the andoullie sausages for about two hours on low heat in a water smoker.
- Shred cabbage and onions. Slice tomatoes.
- Mix the sauce.
- Broil the buns until crispy inside.
- Assembly sandwiches by spreading sauce on the bun and adding condiments as desired.
