Smoked Cajun Sausage Po Boy

A 2018 favorite at the "Kremer Smoke-Off" 🙂

Ingredients

  • Sauce
  • 1 cup Dijon mustard
  • 1 cup light mayonnaise
  • 2 tsp Worcestershire sauce
  • Tabasco to taste (I slowly added until you could just barely get a bite)
  • Sandwich
  • andouille sausages cut into rounds or sliced in half horizontally and vertically
  • hickory wood
  • red cabbage
  • red onion
  • tomato
  • dill pickle slices
  • peppercinis or pickled banana pepper rounds
  • hoagie or small sub buns

Instructions

  1. Smoke the andoullie sausages for about two hours on low heat in a water smoker.
  2. Shred cabbage and onions. Slice tomatoes.
  3. Mix the sauce.
  4. Broil the buns until crispy inside.
  5. Assembly sandwiches by spreading sauce on the bun and adding condiments as desired.
