Peanut Butter Frozen Yogurt

Ingredients

  • 4 cups plain yogurt
  • 1 tsp vanilla extract
  • 1 cup smooth peanut butter
  • 1 cup brown sugar
  • 1/2 cup water
  • Around 2-3 oz dark chocolate ( 85% cocoa bars at Aldi), grated on a fine setting using a box grater

Instructions

  1. Heat the peanut butter, sugar and water in a small saucepan on a low heat. Stir constantly until the sugar has melted and a smooth paste is formed. Remove from the heat and stir in the vanilla.
  2. Transfer into a mixing bowl and allow the mixture to cool for a couple of hours in the fridge. It will become very thick.
  3. Stir the yogurt through the peanut butter mixture until smooth, and then add the grated chocolate.
  4. Run through the ice cream maker according to machine instructions.
  5. Serve! You can eat some immediately (it has a great soft serve texture straight from the machine), or freeze for a few hours to get a more scoopable texture. (If your freezer temp is high, you may need to let it sit for 30 minutes or so to make it creamier before you an scoop it.)
