Oven-Baked Chicken Nuggets
Nuggets can be made in advance and frozen.
Ingredients
- 2 garlic cloves (optional)
- 1/4 c parsley sprigs (optional)
- 4 slices stale bread
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 c Parmesan cheese
- 2 T melted margarine
- 1 pound skinless, boneless chicken breast
- 2 T milk
Instructions
- Preheat oven to 425 degrees. Line a baking sheet with foil and grease it lightly.
- Make the breading: Peel the garlic cloves and placed them in a food processor with the parsley. Process until finely chopped.
- Tear the bread into small pieces and add to the processor. Add the salt, pepper, and Parmesan. Process on and off until the bread is coarsely crumbed. Pour into a paper or plastic bag.
- Drizzle melted butter over the breadcrumbs.
- Cut the chicken into 1-inch cubes. Place the milk in a small bowl. Add the chicken and stir to moisten well.
- Drain the chicken cubes, then place them in the bag of breading and shake until well coated.
- Place the nuggets on the prepared baking sheet, leaving space between them, and bake them for 15-20 minutes, or until crisp. Turning halfway through the cooking time will improve the allover crispness.
