Lemon-Garlic Pork Tenderloin

Cook Time: 30 minutes

Yield: 4 servings

Place in a slow cooker with a small amount of water and lemon juice for parties.

Ingredients

  • 2 T canola or vegetable oil
  • 1 1/2 tsp lemon juice
  • 1 1/2 tsp grated lemon peel
  • 3 garlic cloves, minced
  • 1 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 (3/4 pound) pork tenderloin

Instructions

  1. In a resealable plastic bag, combine the oil, lemon juice, peel, garlic, oregano, salt, and pepper; add pork. Seal bag and turn to coat; refrigerate for 8 hours or overnight.
  2. Drain and discard marinade. Grill, covered, over medium coals for about 13-14 minutes on each side or until juices run clear and a meat thermometer reads 160 degrees. Let stand for 5 minutes before slicing.
