Jesse’s Salsa (Variation on Alycia’s)

Ingredients

  • 8 cups diced tomatoes (30-35 Romas diced 1/4"-1/2" with skins)
  • 2 bell peppers diced
  • 2 medium or 5 small onions diced
  • 7 jalepenos (3-4 with seeds is a medium "Pace" salsa. Leave all seeds in for hot.)
  • 2 cloves minced garlic (or 2 tsp.)
  • 2 T lime juice
  • 2 T canning salt
  • 1 1/3 c vinegar
  • 1/4 c sugar
  • 18 oz. tomato paste (to help thicken. Use more if using a juicier tomato than a Roma)

Instructions

  1. Boil all ingredients for 15 minutes. Simmer one hour.
  2. Pour into jars (1/4" from top) and seal pints for 15 minutes and quarts for 20 minutes.
