Ingredients
- 8 cups diced tomatoes (30-35 Romas diced 1/4"-1/2" with skins)
- 2 bell peppers diced
- 2 medium or 5 small onions diced
- 7 jalepenos (3-4 with seeds is a medium "Pace" salsa. Leave all seeds in for hot.)
- 2 cloves minced garlic (or 2 tsp.)
- 2 T lime juice
- 2 T canning salt
- 1 1/3 c vinegar
- 1/4 c sugar
- 18 oz. tomato paste (to help thicken. Use more if using a juicier tomato than a Roma)
Instructions
- Boil all ingredients for 15 minutes. Simmer one hour.
- Pour into jars (1/4" from top) and seal pints for 15 minutes and quarts for 20 minutes.
