Jesse’s Barbecue Chicken Pizza

EXCELLENT (kids didn't like it though)!

Ingredients

  • Two 10" pizza crusts rolled thin (one batch of "Jesse's Thin Pizza Crust Experiment" Recipe)
  • 1 cup Sweet Baby Ray's Original flavor BBQ sauce
  • 2 - 8 oz skinless boneless chicken breasts
  • Salt
  • Pepper
  • 6 oz (1 1/3 cup shredded) smoked gouda (or a mix of gouda and edam from Aldis)
  • 6 oz (1 1/3 cup shredded) mozzarella cheese
  • Small red onion (thinly sliced)
  • Fresh cilantro (optional)

Instructions

  1. Place pizza stone/pan in the oven. Preheat oven to 425.
  2. In a baking pan, sprinkle chicken breasts with salt and pepper, then baste with 1/3 cup of barbecue sauce. Bake for 20-30 minutes, flipping half way through until chicken is no longer pink. Remove and cool for 10 minutes, then cut into 1/2" pieces.
  3. Spread 1/3 cup of barbecue sauce to within 1/2" of the crust edge. Top with cheese, onion slices, chicken pieces, and cilantro. Bake for approximately 20 minutes until cheese is golden/bubbly and crust is golden.
