EXCELLENT (kids didn't like it though)!
Ingredients
- Two 10" pizza crusts rolled thin (one batch of "Jesse's Thin Pizza Crust Experiment" Recipe)
- 1 cup Sweet Baby Ray's Original flavor BBQ sauce
- 2 - 8 oz skinless boneless chicken breasts
- Salt
- Pepper
- 6 oz (1 1/3 cup shredded) smoked gouda (or a mix of gouda and edam from Aldis)
- 6 oz (1 1/3 cup shredded) mozzarella cheese
- Small red onion (thinly sliced)
- Fresh cilantro (optional)
Instructions
- Place pizza stone/pan in the oven. Preheat oven to 425.
- In a baking pan, sprinkle chicken breasts with salt and pepper, then baste with 1/3 cup of barbecue sauce. Bake for 20-30 minutes, flipping half way through until chicken is no longer pink. Remove and cool for 10 minutes, then cut into 1/2" pieces.
- Spread 1/3 cup of barbecue sauce to within 1/2" of the crust edge. Top with cheese, onion slices, chicken pieces, and cilantro. Bake for approximately 20 minutes until cheese is golden/bubbly and crust is golden.
