Instant Pot Mongolian Beef and Broccoli

Delicious and easy! I like it a little spicier, so used closer to 2 tsp black pepper.

Ingredients

  • 1 1/2 pounds beef flank steak cut into thin strips across the grain (I used sirloin roast)
  • 1 1/2 c beef stock
  • 4 cloves garlic minced
  • 1/2 c soy sauce
  • 1 T honey
  • 2 T toasted sesame oil
  • Black pepper to taste (1-2 tsp)
  • 1/4 c corn starch
  • 1 12-oz bag frozen broccoli florets
  • 1 T toasted sesame seeds (optional)

Instructions

  1. Add steak to instant pot
  2. In a medium glass bowl, whisk beef stock, soy sauce, honey and sesame oil. Season with black pepper to taste. Pour mixture over beef.
  3. Cover Instant Pot, lock lid, and seal vent.
  4. Cook on "Manual/High" for 10 minutes. Quick release once done cooking.
  5. Remove 1/2 cup of liquid and stir in the corn starch. Use a fork or whisk to combine together. Add the mixture back into the pressure cooker and stir. The liquid will begin to thicken as it sits.
  6. Add the broccoli to a microwave safe bowl with 1 cup of water. Microwave on high for five minutes.
  7. Drain and stir broccoli into the beef mixture.
  8. Serve over brown rice and enjoy.
