Instant Pot Mongolian Beef and Broccoli
Delicious and easy! I like it a little spicier, so used closer to 2 tsp black pepper.
Ingredients
- 1 1/2 pounds beef flank steak cut into thin strips across the grain (I used sirloin roast)
- 1 1/2 c beef stock
- 4 cloves garlic minced
- 1/2 c soy sauce
- 1 T honey
- 2 T toasted sesame oil
- Black pepper to taste (1-2 tsp)
- 1/4 c corn starch
- 1 12-oz bag frozen broccoli florets
- 1 T toasted sesame seeds (optional)
Instructions
- Add steak to instant pot
- In a medium glass bowl, whisk beef stock, soy sauce, honey and sesame oil. Season with black pepper to taste. Pour mixture over beef.
- Cover Instant Pot, lock lid, and seal vent.
- Cook on "Manual/High" for 10 minutes. Quick release once done cooking.
- Remove 1/2 cup of liquid and stir in the corn starch. Use a fork or whisk to combine together. Add the mixture back into the pressure cooker and stir. The liquid will begin to thicken as it sits.
- Add the broccoli to a microwave safe bowl with 1 cup of water. Microwave on high for five minutes.
- Drain and stir broccoli into the beef mixture.
- Serve over brown rice and enjoy.
