Fresh Mushroom Soup

Fresh Mushroom Soup

Yield: 6-8 servings

Ingredients

  • 1/4 cup butter or margarine
  • 12 onces sliced fresh mushrooms (4 1/2 cups)
  • 1 to 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups milk
  • 1/2 cup snipped parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon pepper (I like more)
  • 3 tablespoon dry vermouth (optional)

Instructions

  1. In a large saucepan, melt the butter or margarine. Add the mushrooms and garlic to the saucepan; cook and stir for 5 minutes.
  2. Stir in the flour, blending well. Slowly add the broth, followed by the milk. Bring to a boil, stirring constantly.
  3. Reduce the heat and simmer for 5 minutes. Add the parsley, salt, nutmeg, and pepper. Add the vermouth, if desired, and cook until the mixture is heated through.
