Fresh Mushroom Soup
Ingredients
- 1/4 cup butter or margarine
- 12 onces sliced fresh mushrooms (4 1/2 cups)
- 1 to 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 2 cups milk
- 1/2 cup snipped parsley
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon pepper (I like more)
- 3 tablespoon dry vermouth (optional)
Instructions
- In a large saucepan, melt the butter or margarine. Add the mushrooms and garlic to the saucepan; cook and stir for 5 minutes.
- Stir in the flour, blending well. Slowly add the broth, followed by the milk. Bring to a boil, stirring constantly.
- Reduce the heat and simmer for 5 minutes. Add the parsley, salt, nutmeg, and pepper. Add the vermouth, if desired, and cook until the mixture is heated through.
