Ingredients

  • 4 teaspoons olive oil
  • 4 medium potatoes (or sweet potatoes) cut into 1/4-1/2 inch "fries"
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 450 degrees
  2. Line a baking sheet with aluminum foil, brush with 2 teaspoons of olive oil and set aside.
  3. Boil potatoes for 2-3 minutes to release moisture.
  4. Drain the potatoes, toss with olive oil, salt, and black pepper.
  5. Bake 12 minutes, turn the potatoes and sprinkle with Parmesan. Bake another 10-12 minutes.
