Cherry Chip Muffins

Cherry Chip Muffins

Cook Time: 12 minutes

Yield: 1/2 batch = 18 mini muffins

I use a little of the red juice to make these cookies pink.

Ingredients

  • 1 1/2 c flour
  • 2 tsp baking powder
  • 1 egg beaten
  • 1/4 c vegetable oil
  • 1 jar red maraschino cherries drained & chopped
  • 1/2 c sugar
  • 1/2 tsp salt
  • 1/2 c milk
  • 3/4 c mini-chocolate chips

Instructions

  1. Mix dry ingredients.
  2. Mix wet ingredients and add to dry ingredients. Stir until moistened.
  3. Fold in cherries and mini chocolate chips.
  4. Put into mini muffin pans.
  5. Bake at 375 degrees for 10-13 minutes.
  6. Cool 10 minutes in the pan.
