Candied Sweet Potatoes

Candied Sweet Potatoes

Can be grilled the day before and then reheated with foil on at 275 for an 45 minutes or so.

Ingredients

  • 4 large sweet potatoes
  • 1/2 cup butter
  • 1 T brown suger
  • 1/2 cup maple syrup (or honey)
  • 1/2 cup orange juice
  • 1/4 cup honey whiskey
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the grill to 325°.
  2. Wash and peel the sweet potatoes. Slice into 1/4 inch thick rounds.
  3. Spray your grill-safe 10x13 inch baking dish with baking spray, and layer the rounds into it.
  4. In a small non-stick pot, combine the butter, brown sugar, maple syrup, and orange juice. Heat over medium heat, stirring frequently, until the butter is melted. Let simmer for 5 minutes. Remove from heat and set aside.
  5. Pour the sauce over the layered sweet potatoes and yams. Sprinkle with salt and cinnamon. Cover tightly with foil.
  6. Place onto the grill for 30 minutes, and then remove the foil and continue grilling for an additional 15-30 minutes, or until the potatoes are tender and caramelized.
