Beer Battered Fish and Chips

Ingredients

  • 1 lb perch, cod, haddock, or halibut fillets
  • 2-3 large potatoes or sweet potatoes
  • 1 c all-purpose flour
  • 1 c light beer
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • salt
  • garlic powder
  • cayanne pepper

Instructions

  1. Cut fish into 1x2 inch pieces. Rinse fish and pat dry with paper towels.
  2. For chips, slice potatoes into 1/8 inch slices. Place in a plastic ziplock bag and sprinkle with salt, garlic powder and cayanne pepper.
  3. Place the chips a few at a time into 375 degree oil and fry 4-6 minutes. Transfer potatoes onto a wire rack on baking sheet and keep warm in a 300 degree oven.
  4. For batter, mix together flour, beer, eggs, baking powder, 1/4 teaspoon salt, and black pepper. Beat until smooth.
  5. Dip fish in the batter and place in the oil, 4-5 pieces at a time. Fish should fry 2-3 minutes per side, or until golden brown. Transfer fish onto paper towels on baking sheets and keep warm in 300 degree oven until all the fish is cooked.
  6. Serve with tartar sauce, malt vinegar, and lemon slice or juice.
