Beer Battered Fish and Chips
Ingredients
- 1 lb perch, cod, haddock, or halibut fillets
- 2-3 large potatoes or sweet potatoes
- 1 c all-purpose flour
- 1 c light beer
- 2 eggs
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp black pepper
- salt
- garlic powder
- cayanne pepper
Instructions
- Cut fish into 1x2 inch pieces. Rinse fish and pat dry with paper towels.
- For chips, slice potatoes into 1/8 inch slices. Place in a plastic ziplock bag and sprinkle with salt, garlic powder and cayanne pepper.
- Place the chips a few at a time into 375 degree oil and fry 4-6 minutes. Transfer potatoes onto a wire rack on baking sheet and keep warm in a 300 degree oven.
- For batter, mix together flour, beer, eggs, baking powder, 1/4 teaspoon salt, and black pepper. Beat until smooth.
- Dip fish in the batter and place in the oil, 4-5 pieces at a time. Fish should fry 2-3 minutes per side, or until golden brown. Transfer fish onto paper towels on baking sheets and keep warm in 300 degree oven until all the fish is cooked.
- Serve with tartar sauce, malt vinegar, and lemon slice or juice.
