Weight Watchers Gumbo

Ingredients

  • 1 cup all purpose flour
  • 8 cups Swanson Chicken Broth (or home made stock)
  • 10-12 oz turkey sausage sliced into bite sized pieces
  • 1 - 1 1/2 pound chicken breast cut into bite sized pieces
  • 2 cups onion chopped
  • 1 cup green pepper
  • 1 cup celery
  • 3 cloves garlic
  • 1 cup diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup fresh parsley chopped
  • cooking spray
  • 2 cups brown rice

Instructions

  1. For the roux add the flour to a heavy pot and put in an oven set to 400 degrees. You want only the dry flour in the pot. Stir at 10 minute intervals until the flour reaches a color of peanut butter. This will take 30-40 minutes. Remove from pot and set aside.
  2. Spray heavy pot with cooking spray . Place chicken and sausage in pot and brown well on all sides. Add all ingredients including the browned flour and stir until well blended.
  3. Lower heat to a simmer and cook for 2 hours.
  4. Cook brown rice to package directions and serve 1/4 cup with 1 1/2 cup gumbo.Toasted whole wheat bread without butter is perfect as a side but will add a few points.

Notes

Traditional Louisiana gumbo uses oil and flour for the roux and this combination will absolutely make the most delicious example of Louisiana's favorite food. But some fans of the famous Cajun soup don't want the extra fat and calories found in the oil and are willing to give up a little flavor in exchange for a lighter dish. This recipe achieves that. It has no oil and uses meat ingredients that contain less fat.
