Turkey-Pepper Jack Panini

Yield: 2 sandwiches

There’s no need to go out and buy a panini maker to achieve the pressed look characteristic of traditional panini. Instead, cook them in a greased or nonstick waffle iron and weight down the lid. Or prepare the sandwiches in a ridged grillpan, topping them with a heavy skillet to flatten them.

Ingredients

  • 4 slices whole wheat or multi-grain bread
  • 1 tablespoon butter, softened
  • 4 thin slices pepper Jack or salsa cheddar cheese
  • 4 oz. thinly sliced deli smoked turkey
  • 2 large tomato slices
  • 2 tablespoons chopped cilantro

Instructions

  1. Lightly spread one side of each slice of bread with butter. Place buttered-side down on sheet of waxed paper. Layer 2 of the slices with 1 slice cheese, turkey, tomato, cilantro and remaining 1 slice cheese; top with remaining bread, buttered-side up.
  2. Cook in panini maker 2 to 3 minutes or until golden brown and cheese is melted.
