Sunday Brunch Casserole

Ingredients

  • 1 1/2 pounds bacon
  • 1/2 c chopped onion
  • 1/2 c chopped red bell pepper
  • 12 eggs
  • 1 c milk
  • 16 oz shredded potato
  • 1 c shredded cheddar
  • 1 t salt
  • 1/2 t black pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a 9x13 baking dish.
  3. Brown bacon, drain, and crumble. (reserve 2 T bacon drippings)
  4. Cook onion and pepper in bacon drippings until tender. Remove with slotted spoon.
  5. Whisk eggs and milk.
  6. Add potato, cheese, salt, pepper, onion, and bacon to egg mixture.
  7. Pour into baking dish.
  8. Bake 35-45 minutes.
