Sunday Brunch Casserole
Ingredients
- 1 1/2 pounds bacon
- 1/2 c chopped onion
- 1/2 c chopped red bell pepper
- 12 eggs
- 1 c milk
- 16 oz shredded potato
- 1 c shredded cheddar
- 1 t salt
- 1/2 t black pepper
Instructions
- Preheat oven to 350 degrees.
- Grease a 9x13 baking dish.
- Brown bacon, drain, and crumble. (reserve 2 T bacon drippings)
- Cook onion and pepper in bacon drippings until tender. Remove with slotted spoon.
- Whisk eggs and milk.
- Add potato, cheese, salt, pepper, onion, and bacon to egg mixture.
- Pour into baking dish.
- Bake 35-45 minutes.
