Smoked Pork Loin with Raspberry Chipotle Glaze

Ingredients

  • 4 lb. pork loin
  • 3 T. dry spice rub
  • 10 oz. jar seedless raspberry jam
  • 5 oz. bottle chipotle hot pepper sauce (tobasco)

Instructions

  1. Rub pork with dry spice and smoke until pork reaches 150 degrees. Remove from smoker and wrap in aluminum foil.
  2. Preheat the broiler.
  3. Place the jam in a bowl and stir in 1/3 of the chipotle. Mix well, adding more chipotle until the heat reaches your preference.
  4. Unwrap the pork and cover with glaze. Place on a broiler pan and broil until glaze is bubbling. Slice pork against the grain and serve.
