Ingredients
- 4 lb. pork loin
- 3 T. dry spice rub
- 10 oz. jar seedless raspberry jam
- 5 oz. bottle chipotle hot pepper sauce (tobasco)
Instructions
- Rub pork with dry spice and smoke until pork reaches 150 degrees. Remove from smoker and wrap in aluminum foil.
- Preheat the broiler.
- Place the jam in a bowl and stir in 1/3 of the chipotle. Mix well, adding more chipotle until the heat reaches your preference.
- Unwrap the pork and cover with glaze. Place on a broiler pan and broil until glaze is bubbling. Slice pork against the grain and serve.
