Smoked Macaroni & Cheese

Ingredients

  • Macaroni
  • 8 oz macaroni noodles
  • 1 tsp koher salt
  • 4 c water
  • Shredded Cheeses
  • 3 oz cheddar
  • 3oz monterey jack
  • 3 oz gouda
  • Cheese Sauce
  • 2 T butter
  • 8 oz velveeta
  • 3/4 c milk
  • 1/2 c amber beer
  • Seasonings
  • 1 c grated parmesan
  • 1/2 tsp granulated garlic
  • 1/2 tsp black pepper
  • 1/2 c milk
  • Topping
  • 1 T minced chives
  • 2 1/2 strips cooked/crumbled bacon
  • BBQ seasoning

Instructions

  1. Mix all shredded cheeses. About 3 cups total. Cook pasta to al dente.
  2. Melt butter, velveeta, 1.5 cups shredded cheese, 3/4 cup milk and 1/2 c beer. Stir until smooth.
  3. Place noodles in an aluminum pan. Add the seasonings and pour milk over the top. Sprinkle with BBQ rub.
  4. Place over indirect heat 30 min at 350-375 until brown and bubbly. Top with bacon and chives 5 minutes from removing.
