Smoked Macaroni & Cheese
Ingredients
- Macaroni
- 8 oz macaroni noodles
- 1 tsp koher salt
- 4 c water
- Shredded Cheeses
- 3 oz cheddar
- 3oz monterey jack
- 3 oz gouda
- Cheese Sauce
- 2 T butter
- 8 oz velveeta
- 3/4 c milk
- 1/2 c amber beer
- Seasonings
- 1 c grated parmesan
- 1/2 tsp granulated garlic
- 1/2 tsp black pepper
- 1/2 c milk
- Topping
- 1 T minced chives
- 2 1/2 strips cooked/crumbled bacon
- BBQ seasoning
Instructions
- Mix all shredded cheeses. About 3 cups total. Cook pasta to al dente.
- Melt butter, velveeta, 1.5 cups shredded cheese, 3/4 cup milk and 1/2 c beer. Stir until smooth.
- Place noodles in an aluminum pan. Add the seasonings and pour milk over the top. Sprinkle with BBQ rub.
- Place over indirect heat 30 min at 350-375 until brown and bubbly. Top with bacon and chives 5 minutes from removing.
