Smoked Brisket Enchiladas

Ingredients

  • Left over smoked brisket
  • Diced green chilies
  • BBQ Enchilada Sauce
  • Flour tortillas
  • Cheese
  • Homemade BBQ Enchilada Sauce:
  • 1 1/2 c tomato sauce
  • 1 1/5 c water
  • 2 T olive oil
  • 1/3 c chili powder
  • 1/2 c BBQ sauce
  • 1/4 t salt

Instructions

  1. Preheat oven to 375 degrees.
  2. Heat brisket and chop up with chilies.
  3. Fill tortillas with brisket and roll up.
  4. Place in a greased glass baking pan.
  5. Cover with BBQ enchilada sauce and cheese.
  6. Bake for 15-20 minutes.
