Rhubarb Torte

Ingredients

  • 4 c cut rhubarb
  • Crust/Crumbs
  • 1 1/2 c oatmeal
  • 1 c brown sugar
  • 1/2 c butter
  • 2 c flour
  • 1/2 tsp salt
  • Sauce
  • 1/2 tsp cinnamon
  • 1 c sugar
  • 1 c boiling water
  • 2 T corn starch

Instructions

  1. Press 3/4 of the mix into a 9x13 pan.
  2. Cover with 4c cut rhubarb.
  3. In a medium saucepan, combine the sugar, cinnamon, cornstarch, and water. Cook until thickened and clear. Pour over rhubarb.
  4. Pat remaining crumbs on top.
  5. Bake at 350 degrees for 1 hour.
