Reuben Sandwiches

Ingredients

  • 1.5-2 lbs corned beef brisket
  • 1 cup sauerkraut
  • Swiss cheese
  • Rye bread
  • 3 T Mayo
  • 3 T Sour cream
  • 1/2 t Chili paste
  • 1/2 t horseradish
  • 1/2 t lemon juice
  • 1/2 t worcestershire sauce
  • 1 t minced onion

Instructions

  1. Rinse and trim the corned beef. In a dutch oven add enough water tocover the meatby 1 inch. Simmer for 30 minutes then drain the water and refill to 1 inch above the meat. Simmer for 3-4 hours.
  2. Combine the mayo, sour cream, chili paste, horseradish, lemon juice, worcestershire sauce, and onion to make a sauce.
  3. Slice the meat and butter the slices of bread.
  4. Build the sandwiches by putting on swiss cheese, then meat, then saurkraut, finally drizzling sauce over the sauerkraut and topping with a second piece of bread. Place on a skillet grilled cheese style until the cheese is melted. Serve with more sauce if desired.
