Perfect Peppermint Patties

Perfect Peppermint Patties

Yield: 5 dozen

Ingredients

  • 1 pound confectioners' sugar
  • 3 T butter or margarine softened
  • 1/2 tsp vanilla extract
  • 2-3 tsp peppermint extract
  • 1/4 c evaporated milk
  • 2 c (12 oz.) semisweet chocolate chips
  • 2 T shortening

Instructions

  1. In a bowl, combine the first four ingredients.
  2. Add milk and mix well.
  3. Shape into 1" balls and place on a waxed paper-lined baking sheet.
  4. Flatten with a glass to 1/4".
  5. Cover and freeze for 30 minutes.
  6. In a double boiler or microwave safe bowl, melt the chocolate chips and shortening.
  7. Dip patties and place on waxed paper to harden.
