Pan Fried Fish

Ingredients

  • Skin-on fish fillets (about 8 oz)
  • Salt
  • Black pepper
  • Flour
  • 2 T canola oil
  • 3 T butter
  • 1 t lemon juice

Instructions

  1. Heat a heavy pan over medium-high.
  2. Season fish with salt and pepper.
  3. Dredge fish in flour and shake off excess.
  4. When pan is hot, add oil followed immediately by 1 T butter.
  5. When foaming subsides place fish in pan with skin side down.
  6. Jiggle pan for first 10 seconds to keep fish from sticking.
  7. Cook until golden crust forms on meat.
  8. Carefully turn fish and again jiggle pan a few seconds.
  9. Cook until skin turns golden brown.
  10. Remove from pan and pour out cooking fat.
  11. Swirl remaining butter and lemon juice in hot pan.
  12. Pour sauce over fish and serve.
