Bacon Breakfast Cupcakes

Ingredients

  • 20 oz shredded potatoes
  • 2 T vegetable oil
  • 1/2 t salt
  • 1/4 t pepper
  • 6 eggs
  • 2 T milk
  • 3/4 c crumbled crisply cooked bacon
  • 3/4 c shredded cheddar

Instructions

  1. Heat oven to 400 degrees.
  2. Place foil liner in 12 muffin cups and spray with cooking spray.
  3. Mix potatoes, oil, salt, and pepper.
  4. Divide evenly among cups and press lightly.
  5. Bake 45-55 minutes or until golden brown.
  6. Beat eggs and milk. Stir in bacon and cheese.
  7. Firmly press potatoes in muffin cups with bottom of a 1/4 c dry measuring cup. Then top each with about 1/4 cup egg mixture.
  8. Bake 13-16 minutes or until knife comes out clean.
  9. Cool 5 minutes.
