Mushroom-Wild Rice Pilaf
Ingredients
- 6 T. butter
- 1 large onion, chopped
- 8 oz. sliced mushrooms
- 1/2 c. uncooked wild rice
- 1/2 c. uncooked brown rice
- 2 3/4 c. beef broth
- 2 t. chopped thyme
- 1/4 t. salt
- 1/4 t. ground black pepper
Instructions
- In a 3 quart saucepan melt 4 T. butter over medium-high heat. Cook onion in butter 3 minutes. Add mushrooms and cook 3 minutes longer. Add wild rice and brown rice. Cook and stir 1 minute.
- Stir in broth. Heat to boiling and reduce heat. Cover. Simmer 45-50 minutes or until rice is tender and liquid is absorbed. Stir in remaining 2 T. butter, thyme, salt, and pepper.
