Light Butter Roasted Chicken

Ingredients

  • 1 broiler/fryer chicken (2-1/2 pounds), cut up and skin removed
  • 1/2 cup reduced-sodium chicken broth
  • 1/4 cup lemon juice
  • 1 tablespoon butter
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon brown sugar
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried rosemary, crushed
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Place chicken in an ungreased 13-in. x 9-in. baking dish. In a small saucepan, combine the remaining ingredients; bring to a boil. Remove from the heat and pour over chicken. Cover and bake at 325° for 1 to 1-1/4 hours or until chicken juices run clear, basting occasionally.
