Frosted Pineapple or Cherry Squares

Ingredients

  • FILLING
  • 1/2 c sugar
  • 3 T corn starch
  • 1/4 tsp salt
  • 1 egg yolk
  • 1 large can (20 oz) crushed pineapple
  • CRUST
  • 2/3 c milk
  • 1 tsp sugar
  • 1 package (2 tsp) yeast
  • 1/4 c water
  • 4 egg yolks or 2 whole eggs
  • 4 c flour
  • 1 c butter/lard/margarine

Instructions

  1. Mix warm milk and water (115 degrees). Add sugar and egg. Mix.
  2. Mix yeast, flour, and margarine. Add to egg mixture.
  3. Roll dough to fit in large cookie pan or 2 - 9x13 pans. (top and bottom of crust to put filling in between).
  4. Mix all filling ingredients except fruit. Cook until thick while stirring continuously. Cool. Add fruit.
  5. Bake at 375 for 35 minutes. Cool and frost.
