Cinnamon Swirl Bread

Ingredients

  • 1 1/4 - 1 1/2 cups all purpose flour
  • 1 cup whole wheat flour
  • 1 t. rapid rise yeast
  • 1 1/2 T. sugar
  • 1 1/2 T. butter
  • 3/4 cup milk
  • 1/4 t. salt
  • 1 large egg
  • 1/4 cup sugar
  • 1 1/2 t. cinnamon

Instructions

  1. Combine yeast and sugar.
  2. In a saucepan, heat milk, butter, and salt over low heat until butter melts (120-130 degrees)
  3. Slowly pour liquid into yeast and sugar. Stir and let rest 30 seconds. Turn the mixer on low and add flour 1/2 cup at a time.
  4. Midway through flour additions, scrape down bowl and add the egg.
  5. Finish adding the flour and continue beating dough until soft and elastic (3-4 minutes).
  6. Knead dough 6-8 minutes.
  7. Form dough into a ball and place in oiled bowl, cover with plastic wrap, then a towel and allow to rise until doubled.
  8. Punch dough down and reform into a ball and rise until doubled again. Punch dough down and form into a rectangle.
  9. Brush dough with water and sprinkle with cinnamon-sugar mixture.
  10. Roll dough into a spiral loaf and place in a lightly oiled pan. Cover and let rise another 30 minutes.
  11. Brush top of loaf with butter and bake at 355 degrees for 25-30 minutes.
