Beef Gyros

Beef Gyros

Prep Time: 30 minutes

Yield: 4 servings

Serving Size: 2 pita halves

We prepared these in advance, wrapped in foil and warmed in an oven before dinner. Do not add the cucumber sauce until serving though. We also used one T-Bone steak and it was more than enough meat.

Ingredients

  • 1 pound beef round tip steaks, cut 1/8 to 1/4 inch thick
  • 1 tablespoon lemon pepper
  • 4 pita breads, cut crosswise in half
  • 3/4 cup plain or seasoned hummus
  • Cucumber Sauce
  • 1 cup plain Greek yogurt
  • 1 small cucumber, peeled
  • 2 cloves of garlic, chopped
  • 2 TBSP olive oil
  • 1 TBSP white vinegar
  • salt and pepper to taste
  • Toppings:
  • Sliced cucumber, tomatoes, red onions

Instructions

    Cucumber Sauce
  1. Blend all ingredients until smooth. Refrigerate at least one hour.
  2. Meat
  3. Stack beef steaks; cut lengthwise in half, then crosswise into 1-inch wide strips as thin as possible.
  4. Combine beef and lemon pepper in medium bowl.
  5. Heat large nonstick skillet over medium-high heat until hot. Add 1/2 of beef; stir-fry 1 to 3 minutes or until outside surface of beef is no longer pink. (Do not overcook.) Remove from skillet.
  6. Repeat with remaining beef.
  7. Spread hummus into the pita pocket, and the cucumber sauce, and additional toppings, as desired.
