Beef Gyros
We prepared these in advance, wrapped in foil and warmed in an oven before dinner. Do not add the cucumber sauce until serving though. We also used one T-Bone steak and it was more than enough meat.
Ingredients
- 1 pound beef round tip steaks, cut 1/8 to 1/4 inch thick
- 1 tablespoon lemon pepper
- 4 pita breads, cut crosswise in half
- 3/4 cup plain or seasoned hummus
- 1 cup plain Greek yogurt
- 1 small cucumber, peeled
- 2 cloves of garlic, chopped
- 2 TBSP olive oil
- 1 TBSP white vinegar
- salt and pepper to taste
- Sliced cucumber, tomatoes, red onions

Instructions
- Blend all ingredients until smooth. Refrigerate at least one hour.
- Stack beef steaks; cut lengthwise in half, then crosswise into 1-inch wide strips as thin as possible.
- Combine beef and lemon pepper in medium bowl.
- Heat large nonstick skillet over medium-high heat until hot. Add 1/2 of beef; stir-fry 1 to 3 minutes or until outside surface of beef is no longer pink. (Do not overcook.) Remove from skillet.
- Repeat with remaining beef.
- Spread hummus into the pita pocket, and the cucumber sauce, and additional toppings, as desired.
