Beef Barley Soup
Ingredients
- 3 beef soup bones
- 2 1/2 quarts water
- 1 medium onion chopped
- 5 t beef bouillon granules
- 1 T cider vinegar
- 1/2 t salt
- 1/4 t pepper
- 2 bay leaves
- 1 1/2 c chopped carrots
- 1 1/2 c chopped celery
- 2 medium potatoes peeled and cubed
- 1/2 c pearl barley
- 1/2 t dried thyme
Instructions
- In a soup kettle, place soup bones, water, onion, bouillon, vinegar, salt, pepper and bay leaves. Slowly bring to a boil. Reduce heat, cover and simmer 3-4 hours.
- Discard bay leaves. Set aside bones and remove meat.
- Add meat, carrots, celery, potatoes, barley and thyme. Cover and cook 1 hour.
