Beef Barley Soup

Ingredients

  • 3 beef soup bones
  • 2 1/2 quarts water
  • 1 medium onion chopped
  • 5 t beef bouillon granules
  • 1 T cider vinegar
  • 1/2 t salt
  • 1/4 t pepper
  • 2 bay leaves
  • 1 1/2 c chopped carrots
  • 1 1/2 c chopped celery
  • 2 medium potatoes peeled and cubed
  • 1/2 c pearl barley
  • 1/2 t dried thyme

Instructions

  1. In a soup kettle, place soup bones, water, onion, bouillon, vinegar, salt, pepper and bay leaves. Slowly bring to a boil. Reduce heat, cover and simmer 3-4 hours.
  2. Discard bay leaves. Set aside bones and remove meat.
  3. Add meat, carrots, celery, potatoes, barley and thyme. Cover and cook 1 hour.
